Mama's Skillet Meatloaf

I know it has a bad reputation, but meatloaf night in our house is one of the best nights! My kids and my husband are all huge fans. I love it, also, because I consider it an easy night. Not too many complicated ingredients and it's delicious. And, well, I've found a way to step up my meatloaf game. Using my cast iron! Yes, the cast iron skillet that's amazing for everything; especially, in my opinion, meatloaf!


This recipe is reminiscent of shepherd's pie, but as I've been told time and time again, not the same. Which is fine; I love it as it is. My kids aren't huge on onions and such yet, so we leave all that stuff out. My meatloaf is made using eggs, breadcrumbs, fresh herbs and homegrown beef. That's it!

Of course, you don't have to have your own cows and herbs to enjoy this, but I would highly recommend a cast iron skillet. I think that makes it extra crispy and delicious. I also use frozen peas in my recipes because they're easier for me to handle and store in my small, crowded house. The potatoes are russets and my favorites to use in just about everything.

Ingredients

For meatloaf:

  • 2LBS ground beef

  • 1 cup seasoned bread crumbs

  • 2 eggs

  • 1TBSP each of fresh Thyme, Parsley, Basil, rosemary

For peas:

  • 1 bag Frozen peas

  • 1 cup water

  • 1 cup beef broth

  • 2TBSP butter

For Mashed Potatoes:

  • 6 small-medium potatoes, peeled & quartered

  • 1/2 cup milk

  • 2TBSP butter salt, pepper, thyme, parsley to taste

  • 1-1/2 cup cheese (your preference)


Directions

Meatloaf:

  • Mix together all of the ingredients in a large bowl until well combined.

  • Meanwhile, heat a medium skillet on med-high heat Once the meat is mixed, transfer it to the skillet and mash it down until it’s spread evenly

  • Cover and cook for 10-20 minutes, until mostly cooked through

  • Preheat oven to 375 degrees

  • When meatloaf is mostly cooked through, place a paper towel over the top to drain as much grease as you can

  • Transfer skillet to oven and let it cook for 5 minutes


While meatloaf is on the stove, start the mashed potatoes and peas


Mashed potatoes:

  • Boil potatoes for 10-15 minutes, until very soft and possibly coming apart (that’s how you know it’ll be creamy!) drain, add milk, butter, seasonings

  • Mash with masher or use a hand mixer; make sure it’s creamy and is to your taste


Peas:

  • Boil peas in the water and broth, with butter, for 6-8 minutes, drain


All Together Now:

  • When the meatloaf is finished baking (5 minutes), turn the oven to broil, on low

  • Take the meatloaf out and spread the mashed potatoes on top in a thin layer. If you have leftover mashed potatoes that's fine. More for later!

  • Next, spread the peas on top

  • Last, top all of that with your cheese place back in the oven once it’s ready and let it sit until the cheese is melty and delicious (about 2-5 minutes)


Now it's all done!

Enjoy it as is or make some rolls to go with it. There's nothing better than a mashed potato-and-homemade-roll sandwich!

There's also no shame in spicing it up with ketchup or hot sauce.
